Sizzling, Bacon-Wrapped Digby Scallops With Chipotle Mango Sauce

Ingredients

Bacon-Wrapped Digby Scallops

  •  12 large Digby scallops, rinsed and dried
  •   Chipotle Mango BBQ sauce
  •   12 strips thin sliced bacon - can be partially pre cooked to ensure extra crispness
  •   12 wooden toothpicks
  •   Lettuce leaves, for serving

Chipotle Mango BBQ Sauce

  •   1 chipotle pepper (canned in adobo)
  •   1 mango, peeled cored and cubed
  •   1 clove of garlic
  •   1 lime
  •   1/2 cup ketchup
  •   1 tbsp melted butter
  •   1 tbsp packed brown sugar
  •   1/4 tsp salt

Directions

Bacon-Wrapped Digby Scallops

Preheat oven to 425°F and line a rimmed baking sheet with parchment paper. 

Brush scallops on all sides with the Chipotle Mango BBQ sauce. Wrap 1 piece of bacon around each scallop and secure through the center with a wooden toothpick.

Place the bacon-wrapped scallops onto the prepared baking sheet. Cook them under the broiler for about 15-18 minutes, or until scallops are opaque and bacon is crisp—turning once mid-way through.

To serve, line a platter with lettuce leaves and place the bacon-wrapped scallops on top. 

 

Chipotle Mango BBQ Sauce

Place the chipotle pepper, cubed mango, garlic clove, and lime juice into a food processor. Process on high until minced. Add remaining ingredients and blend until smooth. Yields 1 and 1/2 cups of sauce so can be used for more than 12 scallops.
