Mercator En Cave Cinq Ans 2012

Mercator En Cave 2012 is a proprietary blend of predominately Pinot Noir along with select components of classic Nova Scotia reds. It expresses fresh black cherry and raspberry with hints of violet and underlying notes of oak and spice. 

The light acidity and supple fruit profile combine with the soft tannin backbone to create a rounded wine that is wonderful on its own or as a compliment to a broad culinary range from planked salmon to venison and mushroom risotto. 

Barrel aged for 12 months, bottled and cellared “Sur Lattes” for 4 years, this wine is drinking well now but will continue to evolve in your cellar for years to come.

Nose

Aromas of dark berry fruit and black cherry with a hint of spice backed by an inviting vanilla and coffee note are expressed on the nose.

Palate

Natural acidity lifts the aromatics of plum, cherry and spice that are found on the palate and guarantees potential for evolution and further complexity with bottle aging. This wine has a bold mid-palate structure but remains supple and round on the finish.
