Gaspereau Marechal Foch
Marechal Foch, the most widely planted red grape in Nova Scotia, was used to make this wine. Marechal Foch is a grape variety developed fairly recently by cross breeding for natural disease resistance and positive wine potential. It suits our Nova Scotia climate well and produces medium-bodied deep red wines with good ageing potential.
The nose of this red wine reflects the fact that it was aged both in stainless steel and oak. The lovely fruit component of black cherry and blackberry are aromas from the grape, retained by aging a portion of the wine in stainless steel. Aging the remaining portion of wine in French oak barrels enhances its nose with subtle vanilla oak and a complex leather and earthy character.
The black cherry and blackberry notes persist on the palate and combine with a pronounced gamey character to make a mouth-filling complexity. A balanced acidity and moderate backbone of tannin present themselves in the mid- palate and are carried through to a smooth, dry finish.
Pair with hamburgers, sausages, lamb.
Marechal Foch is a food-friendly wine and can be paired with a wide variety of dishes. As such, this wine pairs equally as well with a simple tomato-based pasta dish as it does with robust beef and lamb dishes. It is also a great wine for barbecues.
